Healthy Ways to Use Up the Thanksgiving Leftovers

Turkey TacosToday is the first day to start figuring out how to use up the leftovers from our Thanksgiving meal which was yesterday.  It was wonderfully yummy and I ate so much (I always set out with the intentions of not overeating but I always fail).

When it’s rosemary and lemon roasted turkey, red skinned mashed potatoes (complete with cream, real butter and milk), sweet potato casserole, spinach salad with walnuts, cranberries, goat cheese and a citrus dressing, mushroom gravy, fresh green bean casserole (yes, I’ll update the pictures), Heidi’s mac- n – cheese, fresh cranberry salad, pecan pie, pumpkin crème brûlée and my neighbor’s real New York Cheese cake (yes, it was the real stuff and tasted so awesome and was so fattening but I loved every mouthful), it’s really hard not to.  Everything was homemade, even the pie crust and oh so yummy.

Turkey StockNow it’s time to figure out a way to use the leftovers in hopefully ways with many fewer calories so I can get to losing the pound or so I gained yesterday.  I haven’t had a chance to figure out exactly what I’m going to do so here is an article from the Huffington Post that offers healthy ways to use up the leftovers.
